Homemade Hash browns!

A few days ago, I decided to make my homemade hash browns! I haven't made them in a while because frozen hash browns for the win. I hope you enjoy it and don't forget to share!

The recipe I have below is to make about 4 pancakes, however, I only made two because I was only cooking for myself.

2 Medium Rustic Potatoes
1/2 medium onion
1/4 cup all-purpose flour
1 egg
Vegetable or Canola Oil
Salt, Pepper, Onion Powder, and Paprika

Peel the potatoes and using a box grater, shred the potatoes. Once completed, add cold water, swirl the potatoes around and drain the water. Repeat until the water run clears. Place the potatoes into a clean linen cloth and squeeze the excess water until dry and place the potatoes back into the bowl.

Add flour, the egg, and the onion. While most recipes I've seen online call for the onion to be finely chopped, I prefer to grate it. Add the salt, pepper, 1/4 spoon each of the Onion Powder and Paprika. Stir to combine.

In a large frying pan, add approx 1/2 inch of oil and warm on medium-high heat. Once warm, scoop the batter in the oil and flatten it out. Cook for about 5 minutes per side, until brown.

Remove from the pan and sprinkle with a pinch of salt and serve!

  9. Wow! This actually seems quite easy. I never seem to be able to get mine to turn out right even though they're such a simple item to make. I think I worry about burning them too much and they end up turning out mushy. I like them more crisp. So, I'll take your time to squeeze out the water. I think that's the problem. :)
