Quaran-Eats: Sal Sev



Hello, my loves! I hope everyone is doing well.

A few days ago, I made a fresh batch of Sal Sev and I had to share it with you!

Sal Sev or Chicken foot as it is also known as is a spicy and crunchy snack from Guyana that is commonly sold by many street-side vendors. Everyone has their own recipe for this. Some prefer the wet method in which the wet ingredients are placed into a press or bag and drizzled over hot oil like you would Jilebi or the method that my family uses which I will go into detail below. 

Here's what you'll need:

1 Medium Onion
1 Green Onion
10 Wiwi Pepper or 2 Scotch Bonnet Peppers
3 tbsp Garlic paste
8 cups of flour
Pepper Sauce
Baking Powder
Yellow food coloring
Water
Salt



1. In a food processor or blender, blend onion, green onion, and Wiwi / Scotch bonnet peppers with a few tablespoons of water.


2. In a large bowl, add your flour, the contents of the blender, salt, Garlic paste, and food coloring. Add water in increments,  making sure to mix and combine with the flour until you've created the dough. Knead until smooth. At this point, you can either proceed to the next step or you could cover the dough with a warm cloth and let it rest for about an hour like we do.

3. Once you've kneaded the dough / let it rest. Separate it into balls. Keep in mind that these will have to be rolled out thinly, so use your largest frying pan as a guide.


4. Roll out each dough ball thinly.

5. Turn the heat to medium-high. Once the pan is warm, place the dough into the pan let it set for approx 15 seconds or until you can turn it with ease, then flip to the other side and repeat.

6. Once they are all cooked leave to the side to cool completely.

7. Once all of the dough balls have cooled, cut into three pieces and thinly slice into little strips. You can also cut this with scissors if you like. Separate into batches

8. Add vegetable oil to a pan and warm. Once warm, throw a batch into the oil and fry until golden brown.
